Beef and Rice Burrito
Makes 8
Ingredients
- 1 pound of extra lean ground beef
- 2 tablespoons of extra virgin olive oil
- 1 medium onion, chopped finely
- 3 garlic cloves, minced
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon smoked paprika
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 cups cooked cooled rice
- 1 can black beans, drained and rinsed
- 1/2 cup salsa
- Juice of one lime
- 2 cups grated cheddar cheese
- 8 large whole wheat tortillas
Sour cream and salsa for serving
Instructions
- In a deep pan, sauté the beef and onions using half the olive oil. Remove from the pan using a slotted spoon and set aside.
- Add the remaining olive oil and add the spices to the pan stirring well. Stir constantly until fragrant and add the cooked rice and beans. Stir well and heat through on low heat until piping hot.
- Add the meat back into the pan and combine well. Stir for a few minutes and season according to taste. Add the salsa and stir well. Squeeze the lime into the mixture and lightly combine.
- Lay out the tortillas and divide the cheese amongst the tortillas. Divide the filling between the tortillas and roll up the tortillas burrito style.
- In a frying pan or sandwich press, grill the burritos until golden.
