Easy Greek Baklava Rolls

Makes 12

Ingredients

  • 1 package of defrosted phyllo dough
  • 2/3 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 2 cups of mixed nuts, chopped (walnuts, pistachios, almonds…)
  • 2 teaspoons cinnamon
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup honey
  • peel from half a lemon

Instructions

  1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
  2. In a food processor, pulse the nuts into very small pieces.
  3. Place the nuts, sugar, cinnamon in a bowl and combine.
  4. Open the phyllo pastry and brush the sheet with butter. Top with another and butter that one. One more time for three layers of buttered phyllo.
  5. Sprinkle 1/3 of the nut mixture evenly all over the phyllo. Roll up the phyllo into a tight roll and place on the prepared pan. Continue until all the nut mixture has been used up.
  6. Put the tray into the oven and bake until golden and crispy, about 25 minutes.
  7. Meanwhile, in a small pot, combine the syrup ingredients and bring to a boil. Remove from the heat and allow it to rest. When the baklava comes out of the oven, pour it evenly over the rolls. Allow to rest for a few hours and cut into desired slice sizes.
