Easy Greek Baklava Rolls
Makes 12
Ingredients
- 1 package of defrosted phyllo dough
- 2/3 cup unsalted butter, melted
- 3/4 cup brown sugar
- 2 cups of mixed nuts, chopped (walnuts, pistachios, almonds…)
- 2 teaspoons cinnamon
- 1 cup sugar
- 1/2 cup water
- 1/2 cup honey
- peel from half a lemon
Instructions
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment.
- In a food processor, pulse the nuts into very small pieces.
- Place the nuts, sugar, cinnamon in a bowl and combine.
- Open the phyllo pastry and brush the sheet with butter. Top with another and butter that one. One more time for three layers of buttered phyllo.
- Sprinkle 1/3 of the nut mixture evenly all over the phyllo. Roll up the phyllo into a tight roll and place on the prepared pan. Continue until all the nut mixture has been used up.
- Put the tray into the oven and bake until golden and crispy, about 25 minutes.
- Meanwhile, in a small pot, combine the syrup ingredients and bring to a boil. Remove from the heat and allow it to rest. When the baklava comes out of the oven, pour it evenly over the rolls. Allow to rest for a few hours and cut into desired slice sizes.
