Night Market Vegetarian Tostada

Thank you to everyone who visited the last Night Market of 2022. September 27th we celebrated the end of summer with delicious mexican tostadas and tomato rice. Thank you to everyone who attended our markets over the summer.

​Vegetarian Tostada with Lime Crema and Tomato Rice

COOK TIME: 25 mins. TOTAL TIME: 35 mins

Ingredients for tostada:

2 ears of corn (cut off the cob) or 1 can of corn

2 tomatoes diced

1 can black beans drained and rinsed

1 large red onion diced

1 poblano pepper roasted and chopped (optional)

¼ cup cilantro chopped

1 can refried beans

Ingredients for Lime crema:

1 cup sour cream

2 tbsp lime juice

1 tbsp chopped cilantro

½ tsp garlic powder

Pinch of salt and pepper

Tostada shells (can also use taco shells)

3 cups shredded lettuce

1 tsp cumin

1 tsp paprika

½ tsp chili powder

½ tsp garlic powder

½ tsp onion powder

Pinch of salt and pepper

INSTRUCTIONS

  1. Start with vegetable mix. Combine tomatoes, corn, black beans, red onions and cilantro along with all the spices in a bowl, set aside. You can mix ahead of time and keep in the fridge until ready to assemble tostada.
  2. When ready to assemble, start with spreading refried beans on the tostada shell.
  3. Add about ½ cup of vegetable mix.
  4. Top with shredded lettuce and drizzle with lime crema.
  5. Line Crema: add all ingredients for lime crema into a bowl or blender and mix until well incorporated.

Ingredients for tomato rice:

1 cup rice

1 cup water or vegetable broth

2 tbsp tomato paste

1 cup diced tomatoes

½ cup diced bell peppers

1 tsp cumin

1 tsp garlic powder

1 tsp onion powder

INSTRUCTIONS

  1. Pre heat oven to 350F.
  2. Mix all ingredients in an oven safe dish, cover with foil.
  3. Bake for 30-35 minutes.
  4. Once done, fluff with a fork and serve.
