Night Market Zucchini Feta Fritters

Zucchini Feta Fritters Recipe
INGREDIENTS
15 oz can chickpeas drained and well rinsed
½ cup grated zucchini
½ grated carrots
¼ cup minced onion
1 tsp salt
2tsp garlic powder
Black pepper to taste
½ tsp paprika
2 eggs
1 tsp oil
½ cup oat flour (pulse rolled oats or quick oats in a food processor until it becomes fine like flour)
1 tbsp fresh dill, finely chopped
1 tbsp fresh parsley, finely chopped
1 tsp fresh mint, finely chopped
¼ cup crumbled feta cheese
INSTRUCTIONS
- Place shredded zucchini in a clean kitchen towel and squeeze out as much liquid as you can, set aside.
- In your food processor combine chickpeas, oil and onions and pulse a few times.
- Add the remainder of the ingredients in the food processor and pulse until well combined. Mixture should be wet but scoopable.
- Heat cooking oil in a large pan over medium high heat.
- Using a small cookie scoop or tablespoon place fritters in your hot pan, do not crowed the pan. Using the back of your spoon flatten fritters and cook for 2 minutes per side until golden brown.
