November 30th is National Mason Jar Day! A Mason jar, also known as a canning jar or fruit jar, is a glass jar used in home canning to preserve food. It was named after American tinsmith John Landis Mason, who patented it in 1858. These jars revolutionized the ability for folks to preserve the bounty of their harvest at home, and be able to enjoy local, seasonal fruits and vegetables all year round.
In honour of Mason Jar Day, we will be offering jars of dried soup at Mobile Food Market on November 30th only (Manilla Hall & Wayside Apartments Beaverton). These beautifully layered jars of coconut curry soup make for an easy pot of soup on a winter day, or a great gift or stocking stuffer! 🍲🧦 Thank you to chef Edna, chef Jo & chef Justin for putting these together!

Coconut Curry Soup Mix
- 4 cups of water
- 1 can (14oz) of coconut milk
- ⅔ cup orange lentils
- ⅔ cup green lentils
- 1 tablespoon curry powder
- 1 tablespoons dried chopped onions
- 2 veggie bouillon cubes
- ¾ teaspoon garlic powder
- ¼ teaspoon chili powder
- Remove wrapper from bouillon cubes and add them, plus all remaining ingredients including water and coconut milk to a saucepan.
- Bring to a boil over high heat, reduce heat to low, and simmer until the lentils are tender, about 20 minutes.
- Remove from heat and season to taste.
