Dana's New York Style Gravy

Ingredients
Directions
  1. Heat the olive oil in a heavy pot over medium heat
  2. Cut the ribs into sections and brown in the oil. Once done, set aside
  3. Reduce the heat to low and let the oil cool slightly, then add the crushed garlic and sautée
  4. Add 2-3 tbsp of tomato paste and sautée for about 5 minutes
  5. Stir in the chicken broth and let it cook for another 5 minutes
  6. Add 2 cans of tomato puree and 1½ cans of water and stir
  7. Add the ribs back in and let the pot simmer for 1½ hours
  8. Season to taste with salt, pepper and basil. Add a pinch of baking soda if the sauce is too acidic
  9. Remove the ribs (the cook can eat them!)
  10. Serve over pasta and sprinkle with parmesan cheese
