Dana's New York Style Gravy
Ingredients
- 1/2 rack of back ribs
- 2 large cans of crushed tomatoes
- 1 can tomato paste
- 3 cloves fresh garlic, crushed
- 3 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 2 tbsp basil
- Pinch of baking soda (if necessary)
- Shredded parmesan, to taste
Directions
- Heat the olive oil in a heavy pot over medium heat
- Cut the ribs into sections and brown in the oil. Once done, set aside
- Reduce the heat to low and let the oil cool slightly, then add the crushed garlic and sautée
- Add 2-3 tbsp of tomato paste and sautée for about 5 minutes
- Stir in the chicken broth and let it cook for another 5 minutes
- Add 2 cans of tomato puree and 1½ cans of water and stir
- Add the ribs back in and let the pot simmer for 1½ hours
- Season to taste with salt, pepper and basil. Add a pinch of baking soda if the sauce is too acidic
- Remove the ribs (the cook can eat them!)
- Serve over pasta and sprinkle with parmesan cheese
