Ayla's One Pot Quinoa Bowls
Ingredients
- 1 tbsp olive oil
- 1 cup onion, diced
- 2 tsp - 2 tbsp garlic, minced
- 2-3 cups sweet potato, finely chopped or shredded
- 1 tbsp chilli powder
- 2 tsp cumin
- ½ tsp coriander
- ½ tsp paprika
- ½ tsp cayenne pepper
- 1 can diced tomatoes
- 2 cups uncooked quinoa
- 1½ cups broth
- 1 can black turtle beans, rinsed
- 1 can corn
Directions
- In a large pot, heat olive oil, onion, and garlic until softened
- Add sweet potato, spices, quinoa, and broth for 30 minutes or until quinoa just opens
- Add beans and corn and rest, covered, for 10 minutes
Optional: Garnish with sliced avocados, fresh tomatoes, shredded cheese, chopped jalapeños, etc.

Our family first had this meal when we visited a friend’s house for the first time. It is always a warm reminder of our time with them (although it also can be eaten cold or reheated as leftovers!).
