Ingredients
Directions
  1. In a large pot, heat olive oil, onion, and garlic until softened
  2. Add sweet potato, spices, quinoa, and broth for 30 minutes or until quinoa just opens
  3. Add beans and corn and rest, covered, for 10 minutes

Optional: Garnish with sliced avocados, fresh tomatoes, shredded cheese, chopped jalapeños, etc.

A little more about this recipe...

Our family first had this meal when we visited a friend’s house for the first time. It is always a warm reminder of our time with them (although it also can be eaten cold or reheated as leftovers!).
