Jess' Middle Eastern–Inspired Breakfast Skillet
Ingredients
- 400g ground beef (approx)
- 2 eggs
- 1 small yellow onion, roughly chopped
- 2 tomatoes, roughly chopped
- Roughly chopped fresh parsley, to taste
- 1 tbsp turmeric
- ¾ tbsp curry powder
- ¼ tsp salt
- ¼ tsp onion powder
- ¼ tsp garlic powder
- Black pepper, to taste
- Chilli flakes, to taste
- 1 small pinch baking soda
- ½ tsp oyster sauce
- Naan bread
Optional Toppings
- Garlic sauce/Toum
- Hummus
Directions
- Preheat the oven to 425°F
- Roughly chop the onions, tomatoes, and parsley, and set aside in separate bowls
- Sprinkle a small pinch of baking soda over the ground beef and gently massage it in
- Heat a large oven-safe pan over medium-high heat
- Add the ground beef and push it down to spread it into an even layer
- Let it sear 1–2 minutes without stirring so it gets crispy
- Lower the heat to medium, stir, and cook for another 4–5 minutes until browned, then set the beef aside in a bowl
- Add the onion directly into the used pan
- Cook until the onions are translucent, stirring occasionally
- Add the beef, tomatoes, parsley, and all the spices
- Make 2 wells in the mixture and crack an egg inside each one
- Transfer the pan to the oven and bake until the eggs are set to your liking
- Garnish with parsley, chilli flakes, garlic sauce, and/or hummus, and serve immediately over warmed naan bread

This recipe started as something my partner and I randomly tried years ago and have gradually made our own. Over time, we’ve tweaked the spices and method until it settled into this version. It doesn’t have a deeper significance, it’s just a dish we really love and make often, especially when we want something cozy and satisfying.
